This fruit-based California Apple Brandy can be made from 200 different apple varieties sourced from either Oregon or Washington State. The apples are fermented into a dry cider. Like Cognac, Apple Brandy is double distilled in alembic stills to eau de vie and then aged in oak barrels for a minimum of two years to four years. Many distillers will age the Apple Brandy more than two years to create an even smoother beverage.
